I am originally from Martinique and grew up with a passion for cooking especially in all things sweet and decided to develop my skills and become a pastry chef. I moved to Guadeloupe in 1989 and started my training at a specialist Patisserie College

On completion I returned to Martinique where I was offered a job as a junior pastry chef in a local patisserie. After a couple of years, I really felt I would like to gain further knowledge, so I moved to Paris, for me the homeland of great patisserie, and I soon started working for 3- and 4-star hotels. And that’s where I found my passion for patisserie and love for the job.
